Homemade Mickey Mouse Shaped Soft Baked Cookies with Double cream & nut meg filling
INGREDIENTS:
- 100g of icing sugar
- 125g of unsalted butter
- Two big bowls
- 175g of plain flour
- 100g of pure cocoa powder (Make sure it is 80% or more)
- Nut meg
- 40ml of double cream
- 50g of dark chocolate
- Dough cutters
STEPS
- Add the icing sugar and softened unsalted butter into a bowl an beat it until it becomes soft and white.
- In another bowl, add in the plain flour and cocoa powder. Combine all the ingredients from both bowls. Mix it all together until it becomes semi-doughish. You wouldn't want it to be too doughy as it would be hard to roll. However, if it does become real doughy, then I suggest you add more flour. We are looking at a dough that is not too soft and not too hard.
- Preheat the oven at 165 degrees celsius for 10 minutes.
- Roll the dough out to about 3 millimeters thick and use your dough cutter to cut out your desired shapes.
- Bake it for 15 minutes.
- As for the filling. Add the the double cream and the melted dark chocolate in a bowl and stir. If you like, you may also scrape some nut meg into it for some extra flavouring.
- Once done, let the cookies cool for about 10 minutes before filling it. This is to prevent the fillings from melting due to the temperature of the freshly baked cookies.
- After done, keep the cookies refrigerated.
